With just days to go before The Brewer's Plate, every participating vendor is abuzz tweaking menus, ordering and receiving fresh ingredients, filling kegs and casks, and planning day-of logistics. And we at Fair Food are no exception.

This year, we're proud to be partnering with  Sole Artisan Ales and Food Underground at the Fair Food Farmstand Table. Both tablemates share a commitment to sourcing locally and supporting sustainable agriculture in our region. Joe Percoco brews his Sole Artisan Ales out of Susquehanna Brewing Company in Pittston, PA, buying the bulk of his ingredients from local hops farms and Pennsylvania malt houses and relying on locally produced honey, maple syrup, herbs, and spices to flavor his recipes. Ari Miller, chef and founder of Food Underground, celebrates local ingredients at every private dinner, cooking workshop, and event he organizes. At his Cooks’ Canvas series of dinners, he showcases up-and-coming Philadelphia chefs, supporting the next generation of our city's food scene, while utilizing ingredients from farmers and artisans in our area. Of course, our table is only one of many at The Brewer's Plate where you'll find bites and beverages made with locally sourced ingredients. As you scope out the food and drink offerings on Sunday, keep a look-out for bright-green flags, which will indicate vendors using produce, meats, dairy, and other ingredients that have been grown or produced in the Greater Philadelphia region.

Here's what Food Underground will be cooking up at the Fair Food table, to be paired with brews from Sole Artisan Ales:

For the VIP hour

  • Corned duck breast, pickled sanditos, horsy slaw, and micro greens served on a Castle Valley rye berry cracker baked with shaved apples and pickled mustard seed

For General Admission

  • Roasted root hummus, cured egg yolk, and black garlic on a pasta cracklings
  •  Aged cheddar and honey on pasta cracklings
