Spring is, by definition, a season of transition, a time when we prepare for and anticipate the hot summer to come. Springtime crops are with us for only a short time-tender wild foods abound one week and disappear the next. But now that June is almost here, we're entering the time of year when many local vegetables make themselves plentiful for months at a time. Making their 2013 debut this week are ORGANIC RAVEN ZUCCHINI from Landisdale Farm - this variety sports an especially deep greenCortland Onion skin - and it couldn't be easier to turn into your new favorite side dish (check out the recipe to the left). ORGANIC  GOLD BEETS with gorgeous tops from Marolda Farm are here, too (their bright yellow color will keep your cutting board from looking like a crime scene). Also appearing are fresh onions of all kinds: ORGANIC YOUNG CORTLAND ONIONS (a yellow variety) from Blue Moon Acres, and ORGANIC FRESH RED PEARL and RED SPRING ONIONS from our Amish friends at Lancaster Farm Fresh. Uncured onions taste sweeter and milder than their matured and dried cousins, so they're even more versatile for salads and quick sautés. And those pretty little pearls will fit perfectly between Mother Earth Organics' CRIMINI MUSHROOMS and slices of zucchini on a skewer.

Another highly anticipated allium rears its delicately curved head this week: ORGANIC GARLICGarlic Scapes SCAPES! (They definitely fall under the "ephemeral springtime treat" heading, but they last for weeks in a plastic bag in the fridge and pickle beautifully, so be sure to stock up while you can.) Scapes are the stem and closed bud of what would be a garlic flower' they are cut down to promote growth of the bulb. Chop finely and use as you would cured garlic, but enjoy its sweeter, milder flavor and pretty green hue. Add thin slices to salads, or toss whole scapes with olive oil and sea salt, the  n roast (or grill) until browned to perfection.

And STRCheese PlateAWBERRIES from A.T. Buzby Farm (via Common Market) reach peak flavor this week. Pick up a few quarts along with a pint of Little Baby's new STRAWBERRY PINK PEPPERCORN flavor (made with local berries and cream, of course) because there's no such thing as strawberry overload.
