The Farmstand will be bursting with spring flavors this week: STRAWBERRIES from Fifer Orchard, RHUBARB from Lancaster Farm Fresh and fresh WALLA WALLA ONIONS from Blooming Glen! Also noteworthy are the BUNCHED RED BEETS from Marolda Farm beautiful field-grown LETTUCES & GREENS from Paradise Organics. The wait is finally over!

A limited run of Sheep cheese is in from Valley Shepherd today: TARTUFO, a luxe pecorino studded with truffles and CREMA DE BLUE. CREMA is silly rich—the “ice cream” of our blue selections. I recommend it with some Berliner Weisse and a drizzle of our Urban Apiary honey for a swoon-worthy dessert. And, fresh  CHOPS, TENDERLOINS, COUNTRY RIBS and BUTT ROAST will arrive Thursday afternoon from Country Time Farm. 

Also this week, we want to introduce you to the Plymouth Rock or Barred Rock breed. This chicken breed was developed as blend of five varieties in New England the mid-19th century by John C. Bennett. They became popular for their hardiness, docility, and good humored but low-volume chatty nature. Their coats are pretty striations of gray, black and white and they generally start laying eggs at about 6 months. Meadow Run‘s flock has just begun to lay and last night the Farmstand got a flush of their PULLET EGGS, a real spring treat! These mini-eggs are the same rich pastured eggs that have a cult following in our fridge, only younger and a total steal at $2.50 a dozen. Pullet eggs, also known as Peewee, are laid by hens less than 1 year and therefore occur only a few weeks a year until the hens get the hang of the laying cycle. To give you an idea, most “Large” eggs are between 23-26 ounces, whereas pullet eggs are 10-15 ounces. I recommend soft boiling them and dipping parboiled asparagus spears into the yolk with a splash of lemon. Or try cracking one into the middle of your favorite pizza dough and letting the egg set as the pizza cooks. Their sun-gold yolks are bound to enhance any sauce too. Whatever your preference, our pastured pullets are a must try you won’t find elsewhere!
